Have any Democratic candidates for statewide office not been Mormon in recent times? Comparing their performance to those of Mormon nominees would be a good starting point for this analysis. Likewise for Republican nominees, though I must assume there haven't been many non-Mormons who have been able to survive GOP primaries in Utah.
