If I had to pick a favorite cuisine, it would probably be Lebanese/Arab (following closely by Persian).

It was sort of a quasi-ritual of mine to eat there at least every other Sunday, and I would get like 4-5 things, bill just for myself would be like €60....lamb, tabouleh, hummus, kabis.  Made you want to slap yo momma, it was so good.   11/10

Here in DC, probably Rumi's Kitchen (Persian, obviously).  I could eat bowls upon bowls of their Shirazi salad.

I've had a lot of great dishes, not sure if I could choose one as the best, but I'll give you the most recent example--I was staying in Elizabethtown for my buddy's wedding a couple of weeks ago, I decided to go to a local cafe and pick up something for breakfast before I went over there (I was a groomsman so I had to be early) so I got this breakfast hash that had sour cream, avocado, chorizo, caramelized onions, obviously potatoes and eggs and whatnot...I was actually angry when I started eating it because it was so good that I didn't want to ever finish it.

I'm a slut for a good breakfast.

Probably kobe or wagyu beef.  Two of my favorite places I've had that are the Meat Market steakhouse in Miami Beach and Perry's Steakhouse here in Franklin, Tennessee.
