Including "moment" does not cause a grammatical error but is not an accurate quotation. Neither "this is the happiest I've ever felt" nor "this is the happiest moment I've ever felt" is technically wrong, but the word "moment" is not necessary here. She is talking about a longer-term state of being and not one specific moment.
