When I first moved East for grad school in 1979, the Midwest had not yet discovered hot subs of any kind. One of the hot subs I discovered throughout the Boston area was the Steak and Cheese (or the Steak, Cheese and Onion) grinder available at most any pizza/sandwich shop. I loved them, and they were almost always served with provolone. When I had a chance to visit Philly I did recognize that their cheesesteaks were very similar, but not exactly the same. However, Boston's was my first love, so their take is the one I prefer.

Whiz is a thing that tourists think is necessary to fit in. It's actually perfectly fine and normal to just geat a steak with provolone instead.

Anyway, FF when done well but often too dry, same with roast pork.
