I had both a PS2 and Gamecube with that generation, but never really had many Gamecube games.

I didn't had either of those but i liked Mario Kart: Double Dash on GC with a friend, and GTA: San Andreas with other friends.

I've finished GTA San Andreas on later platforms: PC, PS3 and probably also PS4 once. But i'm not buying the remakes because they're trash. I played GTA III too once (but not on PS2). Never played VC. Was waiting for the remakes, but I suppose i'll have to play the PS4 version once (which I already own, it's not available for buying anymore).
