I'm not sure of this answer, but I've heard it said that wine in Biblical times probably had a much lower alcohol content than wine does today because there wasn't really enough time to let it ferment in the same way it does today.

I haven't heard of that, but wine was usually mixed with water back then. Reason is that uncontaminated drinking sources were not always available and if the water were unsafe to drink, the alcohol in the wine would sterilize it.

Could god create a wine so alcoholic that he himself could not drink it without needing to lay down?

Ancient wine was somewhat weaker than it is today, and was usually watered down (Greeks considered drinking wine straight barbaric), as well as mixed with all sorts of herbs and flavourings into some medicinal sludge we'd probably find quite distasteful today. So probably quite a lot, if he was so inclined.

I’ve actually heard it’s a misconception that ancient wine had less alcohol in it.  While the Greeks and Romans did indeed mix it with water and “barbarians” didn’t, the wine they drank would have been closer to a modern port wine with a much higher alcohol content.  So, while the actual drink they consumed might have been less alcoholic due to the water, the actual wine was more.
