How is it less legitimate than any other government? “I don’t like it” isn’t reason to reject it.

Which people exactly? Maybe some public figures want to say so not to anger Beijing. I think the Western world just reconize Taiwan as sovereign country. If the US and EU are doing it in concert, it's a much taller order for China to go against both at the same time.
