Let's say that the Quebec expedition becomes a success for the American side. How would this victory shape Benedict Arnold's image with such a huge victory outside of the 13 colonies under his name, and is it likely he would defect to the British after getting credited taking Quebec? And how significant would he be after the war ended? Would Quebec-proper and it's French-Catholic citizens end up joining the revolution and the US?

It's extremely unlikely that Canadiens would have been enthusiastic supporters of the Rebellion. It's also unlikely that the Rebels could hold Quebec against a British counterattack. Moreover, it's hard to see how Quebec City could have been taken unless Gen. Montgomery managed to bag Gen. Carleton and his men at Montreal first instead of them escaping to help defend Quebec City, in which case Montgomery (who was the senior officer) would likely have survived the battle and received the credit. So this change of events wouldn't have aided Arnold's fame much and might well have served to help embitter Arnold even more.

This scenario causes so many knock on effects on both the course of the Revolution and of Arnold's career, it's difficult to prognosticate what would happen as a result other than Arnold would've been far less likely to meet, let alone marry, Peggy Shipton.
