Why do fans of these video games seem to hate each other almost like Star Wars fans??

you need to flesh this out a bit more if you want us to know what you're talking about.  Are you saying the fans of different Sonic games hate each other?  And they are almost like Star Wars fans?  Do fans of different Star Wars movies hate each other?

Hating someone for liking the same consumer art you do, but in the "wrong" way is dumber than hating someone for liking "god" in the wrong way.

Does this happen in other forms of art?  Do Beatles fans that love Revolver hate Beatles fans that love the White Album?

I mean, the fandom is divided and many people are fans of one part than another. There are a lot of Beatlemanics who do tend to hate certain albums. Some also are critical of John Lennon’s personal life.

Sonic has always been trash, and was made for children with the attention deficits.

Because the nature of both series are uncannily similar, not coincidentally, I have largely stopped discussing ANYTHING from either series for exactly this reason. I will gladly discuss either series' merits at where I stopped...but nothing after.

You have The Original Era everyone loves because they were groundbreaking, original, simple, and new [but not without flaws...but we'll get to that later].

[Ex: The Original Trilogy, Sonic 1-3]

Then there is a desert, a long desert of longing and waiting for something new, which hypes everything up beyond healthy expectations....

[Ex: Sonic X-treme, The Thrawn Trilogy]

Enter 1999, suddenly the series goes in a completely different and ambitious direction that completely alters perceptions of what the series is, and it becomes divisive, while critics generally appreciate the ideas initially...with the vocal haters take to the internet and control the narrative. The whole thing leaves the originators disillusioned.

[Ex: The Prequels, Sonic Adventure-Sonic '06]

Eventually, nostalgia for the original series takes over and the next era is pretty much just trying to recapture the magic, only the spirit is largely absent and superficial aspects of the letter are followed,...but there's also an undercurrent mocking the fans that liked the ambitious direction, which in turn creates a backlash from a generation that honestly grew up with that direction first.

[Ex: The Sequel Trilogy,  Sonic Colors-?]

Finally,  the battle between ambition and innovation vs. purity and accessibility erupts and results in products with little to no consistency at all and an oversaturation of products out there, which in turn means fans are going to move on and "grow up" after losing track.

Long running franchises that don't carefully gatekeep internally tend to fall into this cycle [MCU, Super Mario Bros.] but Sonic and Star Wars are by far the worst offenders simply because of how popular they were.

He beat his first wife. How can you defend that?

No idea, after Ahsoka battled Darth Maul in the final Clone Wars throwdown [Season 7], I haven't bothered to touch Star Wars.

Haven't heard from Sonic since the first of one of those kart racing games [the ones with other SEGA characters too].
