I've read several times the Democrats picked up 27 seats on election night, but various seats flipped, leaving the final number at D+40. Does anyone know which seats specifically flipped between Election Day and the final count?

A bunch in CA flipped. There was also GA-6, NJ-3, UT-4, NM-2, ME-2 and NY-22, and I'm sure I'm forgetting at least a couple.

I recall that the GOP led in CA-10, CA-21, CA-39, and CA-45 on election night. At the time it looked CA would only be D+3.

They didn't all 'flip' after the election, the Democrats were ahead in a bunch but they hadn't been called.  I believe this includes one of the districts in Florida, Illinois-14, maybe Iowa-3, Kansas-3, New York-11, Oklahoma-5, South Carolina-1 and Washington-8 as well as some of the others already mentioned.

KS-03 was called pretty soon after the polls closed

Do you mean races where Republicans were ahead on Election Night? CA-10, CA-21, CA-39, CA-45, NM-02, NJ-03, and ME-02 (since RCV hadn't been tabulated.) The count was D+27 because some other races where Democrats were ahead (CA-25, CA-48, NY-22, etc.) hadn't been called yet.

The NYT forecast froze on Wednesday, Nov. 7 at 2pm.

At that time, it projected a breakdown of 229-206. It had Republicans favored in NM-2, ME-2, CA-10, NJ-3, CA-45, CA-39, and CA-21 (which had already been called).
