Prince Charles is already 5 years older than the oldest person to become a British monarch, William IV.  However, Sophia of Hanover is the oldest person to have been next in line, dying 2 months too early to become queen at age 83.

At least Elizabeth II likely won't be succeeded by her great-grandchild like Louis XIV was.  Still, it would mean that the next British monarch would indeed be George VII as some people think, just not the George they were thinking of.

Is there a minimum age for kings and queens in the UK?

Usually one has a regent if they are a child.

Well, since this thread was started, QE2 was succeeded by President Sandra Mason of Barbados.

Why is there a 'Prince and Princess of Wales' royal title (and designated heir to the throne), but not an equivalent for Scotland?  I know 'Prince and Princess of Scotland' sounds strange at first, but I am sure it that novelty will wear off over time.

There is exactly that.
