I've been debating that with myself the past few days... I find some stretches of interstate that a lot of people have said are boring to be really beautiful. I think the most beautiful interstates in America are either:

I-24 between Smyrna, TN and Montagle, TN.
I-65 between Spring Hill, TN and Ardmore, TN.
I-65 between Mobile, AL and Montgomery, AL.

I-81 from its southern terminus to Harrisburg, PA.
I-26 from Asheville, NC to Johnson City, TN
I-77 from the VA/NC border to Wytheville, VA
I-40 from Clyde, NC to Newport, TN
I-64 from Charlottesville, VA to Charleston, WV
I-68. All of it.
I-70 from Frederick, MD to Breezewood, PA
I-70 from Denver, CO to Grand Junction, CO
I'm sure there are plenty more, especially out west, that I have yet to discover.

I-15 in Northern Arizona
I-80 near the CA/NV border


Hoesntly the number of interstates I've been on is kinda low for someone who's traveled a fair amount in my life.

I-59 from Birmingham, AL - Chattanooga, TN
I-5 from LA to Kern County
I-5 from Redding to Canada Border
I-5 from Irvine to Mexico Border
I-84...all of it
I-70 from Western terminus to Denver, CO

I-70 from Denver, CO to its western terminus in UT

I'm confident there are many more that I've yet to discover, but these immediately come to mind as some of the most beautiful stretches of road that I've been on.

It isn't interstate, but the PCH is drop dead beautiful. I-5 is also a pretty incredible stretch of road North of San Francisco

Hard to say, all the ones I've been on were ugly. (I-16 in Georgia actually looked abandoned with cracks and weeds despite the traffic)

I like to avoid the interstates on road trips, because the old US highways generally offer more scenery. But I've traveled on interstates in 49 states so, here's my favorites.

I-70: Denver, CO to Grand Junction, CO. Others have said this as well, and I think the combination of high mountains, canyons, and desert mesas make it hard to beat.

I-84: Portland, OR to Pendleton, OR (and probably to Baker City, but I didn't go that far). I'm surprised this hasn't been on more lists. It parallels US-30 through the Columbia river gorge. US-30 was the first designated scenic highway for good reason.

I-81: Winchester, VA to Bristol, TN. I thought I should pick one in the east. This goes along the Shenandoah valley and runs parallel with the Blue Ridge.

Honorable mentions:
I-93: Concord, NH to St Johnsbury, VT. I miss the Old Man of the Mountain which collapsed in 2003, but the drive through the White mountains is worth it nonetheless.

I-15: Mesquite, NV to St George, UT. This cuts the corner of AZ where it goes through the Virgin river gorge. It's short but immensely scenic.
