I'm not very familiar with AZ politics so I'm very curious who Dems might run to replace Senator McCain should he leave office before May 30th and a special election be held this November.

McCain isn't leaving before May 30, except in a coffin.

Heck, I think he'd prefer dying in office to dying in retirement. He'd probably find retirement boring (even though it would very short given his health).

Probably Mark Kelly; Kirkpatrick is focused on running for congress and lost a bit of star power after she under-preformed expectations somewhat in 2016.
