If someone wants to believe that a small number of dinosaurs survived in niche environments into the human epoch, there isn't real proof that they haven't. It seems unlikely based on what we've found and haven't found, but our knowledge about this is based to a large extent on an argument from silence.  It's not the same in that way as the claim that the earth is less than 10 K years old.

The ecological niches which the dinosaurs occupied are now being occupied by other species. Aside from small dinosaurs like Compsognathus or Microceratus, we'd know if they were still around. A sauropod couldn't exactly hide in the jungle. The plain (and unfortunate) fact is that most of Earth has been settled. There are very few remote areas where dinosaurs could conceivably exist.

Now, it's possible that some dinosaurs survived (for a very, very short time) into the Paleocene, but beyond that I think it's safe to say that dinosaurs are extinct. A coelacanth-like rediscovery of certain small species isn't out of the question, but IMO it is highly unlikely.
