Plain or with hot sauce. I love potatoes with hot sauce, although I usually eat hot sauce more with hash browns and eggs than fries.

BBQ sauce.  I'm shocked I'm the only voter for this.

Mayo can be acceptable, as in Belgian-style frites, but it has to be the right mayo- Hellmann's won't cut it.  Whereas any old crappy BBQ sauce will.

Hot sauce, or just salt and/or pepper, or Old Bay seasoning (which is I guess the midpoint of those two options), is also fine sometimes. Or, heck, honey, or honey mustard, that's good too.  Depends on the fry tho.  BBQ sauce will work with any fry, whereas honey mustard wants a fast food fry and mayo wants a Belgian frite and a shake of Old Bay is best with steak fries.

Anyway, ketchup and malt vinegar are both horribly overrated, I'll have 'em for authenticity's sake every once in a while, or if it's the only option, but I won't be thrilled about it.  And wow I didn't realize I had this many opinions on fry condiments.

first choice - mayonnaise
second - mayonnaise and ketchup
third - ketchup only

Fries should always be heavily salted.

Prefer fries fried in real animal fat, such as beef tallow, lard, or duck fat.  However it is extremely rare I eat fried at all.

Weird, just weird. But you are lucky man, since fries are one of those foods that really should not be consumed other than on the very rare occasion if you care about your health, particularly at our age.
