I've always thought of it as being Sunday, based on Christ's resurrection and the layout of most calendars.

Sunday. I don't work the first two days of the week normally and then work the remaining five (Tuesday through Saturday). My work schedule is actually more logical than the standard one.

Of course the payroll department actually considers it to be Saturday.

Isn't your sabbath supposed to be the seventh day? You know, when God rested?

The Sabbath is indeed on Saturday, but we worship on Sunday because that's the day Christ rose from the dead.

Matthew 28:1 says "In the end of the Sabbath, as it began to dawn toward the first day of the week, came Mary Magdalene and the other Mary to the sepulchre."

So, in this verse it says the first day of the week was after the Sabbath and if the Lord rose on the first day of the week (read later in Matthew 28), then the Sabbath is on Saturday and the first day of the week is on Sunday.  Which also corresponds to Genesis 2:3 "And, on the seventh day, God rested."

I've always thought it was Monday for, as most calendars here start on Monday and in my native language Tuesday, Thursday and Friday are actually called Second, Fourth and Fifth day respectively.
But apart from my local prejudices, it seems simply more logical that the week should start with the first working day and not across the weekend.

I suspect the term originated as sort of an analogy to "book ends"

We're talking about a passage of time.  You wouldn't describe 12.01 pm as an "end" of the afternoon, like the end of a piece of string or something.

Monday.  Saturday and Sunday are the weekend.

Then, why do most American calendars run Sunday-Saturday?  Is it by error, or could they have a reason?

You gave some kind of religious reasoning for it, and we all know that in this country that trumps logic any time.

It's Sunday of course. Look at a damn calendar.

And, Sunday is the sabbath because Emperor Constantine declared it as such. (http://en.wikipedia.org/wiki/Sunday_Sabbath)

Okay, so the sabbath is the day God rested after six days of work.

I was taught Sunday, but I've always thought Monday made more sense...after all, Sunday is part of the weekend.
