So at various times throughout the Cold War, our government thought it imperative to make sure that country X didn't have a leftist government. Besides Cuba, which countries managed to have leftist governments without suffering regime change?

If he counts, I think you got one. As far as I know the US was not involved in the military coup of 1955.
