The Gospel of Matthew has no claim of authorship. Mark doesn't either. Luke is credibly attributed to Paul's personal physician who did essentially a research mission for Theopholous, the results being the Gospel of Luke and the Book of Acts. As you implied, the authorship of the book is not claimed by the text, just by tradition.

John, however, does claim authorship. John 21:24 claims that "the disciple whom Jesus loved was following them. (This was the one who had leaned back against Jesus at the supper and had said, “Lord, who is going to betray you?”) (from John 21:20) as the author of the book. So from the perspective of someone who believes that the text is credible, the authorship of the book of John is, in fact, known.
