I wonder if George McGovern would also be a possibility (basing on McGovern endorsing RFK and running as effectively a stand-in after RFK was assassinated).

I guess anything's possible; but I wonder if RFK and McCarthy would have been able to patch things up after the primaries (with McCarthy only entering the Presidential race after RFK and also McGovern declined to run in 1968; only for RFK to jump in after McCarthy's strong showing in New Hampshire).
