Not everyone can have a job that is interesting.  Besides, those jobs that you're poo-pooing improved their standard of income, helped put their children through school, helped their parents survive when times were tough.  And in those days, most children at lower income levels had to work at an earlier age - the ones that had to go work on the farm simply don't show up as much to the people who want to see them.
