New Mexico's large Hispanic Catholic population was probably excited about JFK.
As for Ford coming close in Mississippi, white Mississippians were so disillusioned with the national Democrats on civil rights, they were leery of any Democratic presidential candidate, even a Southerner like Carter. Ford easily won Mississippi whites, but blacks overwhelmingly backed Carter, and Carter also obtained just enough white voters to carry the state.
