Yes, I know Gelbwurst doesn't contain pig brains... not anymore it does.

That's an awful shame.  After all 'mad cow' was never found in pigs.  I would like to be able to eat brains, particularly a brain sausage or packed meat.  Back in St. Louis they used to serve deep fried brain sandwiches with mayo and lettuce in local bars.. don't know if they still do.
