Pardon my ignorance, but what counties are considered to constitute "Cajun country"?

Those western three parishes in this map - and the two north of them - were settled very late, with a large share of the immigrants being Cajuns. Still, it's a different place really.
I'm not sure I'd include the heavily Black Plantation Country Parishes, though I suppose you can. Plaquemines (and the rural parts of Jefferson, though these are such a small part of the population as to not matter much) belong in.

Cajuns are really much more common with the immigrant cultures of the northeast and midwest. They have the same religion, similar views on family and lifestyles, and just have more in common with them than, say Arkansas whites.

While Cajuns have a culture that is distinct from most southern Whites, their culture still overlaps more with other southern whites than most ethnic whites in the Northeast and the Midwest.
