I love Indian food, but the Southern style is somehow more appealing and healthier seeming than the northing (Punjabi). I'm curious, are there many other varieties that we don't see in the US?
I love south indian food and not because it is healthier. I am not sure about it but it does seem to be a little more healthier. North indian food in general seems to have more of an emphasis on the ghee but maybe it is just because I have seen my family cook lol. Now about the restaurants in the US, most of the food there seem to be chicken tikka masala and some very staple dishes like dal and navaratan korma. For the most part this is either indian fusion or british/indian fusion. As you may know there is vast differences in culture in India. You could say it is more alike to Europe than to America. I have very rarely seen true authentic indian restaurants here which cater to a specific cuisine. The reason for it is that it is never truly appreciated by the larger public and these restaurants can only be successful in places with a very high Indian population. Sadly only the bay area and perhaps new jersey qualify.
