By "healthy" I mean anything with nutritional value.

Which means no junk like cake etc., pasta or bread.

Good carbs like in fruit are healthy.

It's up to you to define what you think is healthy.

Water if it's not contaminated is about as healthy as you can get.
I didn't think of water when I created this thread.
I like potatoes, but I am not sure how healthy they are.

Salmon is one of the safer fish for that. I believe that generally, mercury is going to be found more frequently in fish that are a) large and b) apex predators. I've heard shark and swordfish are two of the worst fishes out there for mercury content.

Yeah. I've also read numerous reports here that salmon is safe. Additionally, EU food standards are often even stricter than the US as far as I know.

I am not an expert on nutrition. Bread and pasta are both high in carbs. They may be ok in moderation. I was thinking that fruits and vegetables were a better example of good carbs.
I believe that "foods" that contain a high amount of sugar are not healthy.

It depends on the person. Obviously someone who exercises can eat more high calorie foods than someone who doesn't. It also depends on age. I have a harder time losing weight as I get older.

Also some if not all fruits and vegetables are good sources of vitamins.

I think that's a bit of an overstated fear. Mercury content in salmon is almost always very low in amounts that is safe for humans.
