I've been on a cheese craze as of late. I've been trying many types of cheese and here are my favorites:

Cheddar (Very easy for making dip for which I like to dip my chips in)
Gouda (and the smoked variety)
Provolone
Mozzarella
Muenster
Swiss (and baby Swiss)
Havarti
Jarlsberg
Roquefort
Gorgonzola

I love my cheese pungent and funky. 

Can't beat that cheddar (extra extra sharp).

Cheddar (versatile, good for a lot of dishes, great snack; the sharper, the better)
Provolone
Emmental (better and more authentic version of Swiss)
Mozzarella (fresh is good for snacking and with salads, part-skim is good on pizza and pasta dishes)
Bleu (favorite salad dressing, good burger topping, like dipping buffalo wings in it, like it crumbled on salads)
Double Gloucester (basically a creamier cheddar, pairs well with Blue Stilton (British version of Bleu basically) to make a nice Huntsman blend)
Manchego (mild, nutty, good sheep's milk cheese)
