Suppose that an open Oklahoma US Senate race happens, and Democrats go with a strong candidate in popular former Governor Brad Henry, while Republicans go with a weak candidate in unpopular former Governor Mary Fallin. Does the difference in candidate quality allow Dems to win, or does polarization take over?

Lather, rinse and repeat. This is one of the most deeply Republican states in the country. It would take a Roy Moore-level candidate for a Democrat to win a Senate race, and Mary Fallin may be unpopular, but she's certainly not Roy Moore level awful.
