Although this is a possible action you can take, I have a alas been unable to, mostly because Rome is so insulated from pagan areas. I'm currently in a game where I'm playing a Slavic pagan Emperor of Poland, so I might have a chance here. My goal is basically depose the Pope, destroy the Papacy, then convert to a "heresy" of Catholicism, and then attack the remaining Catholic countries in Europe and convert them to the Middle Ages equivalent of hipster Christianity.

I have managed to destroy the Caliphate before, but that's easier for a variety of reasons. I once managed to do it as a Zoroastrian of all things.

EU4 > HOI4 > CK3 > Stellaris, imo.

The most frustrating thing with Crusader Kings for me is the early-game partition laws. I don't want to have to repeatedly reconquer my land when my character die's every time. I'd rather take-over the world for the red banner of Syndicalism in Kaissereich or rebuild Prussia in EU4.

I imagine this would be pretty easy with that Viking guy who gets like 10k armies at start though?

There’s a mod so you can adopt primogeniture right at the start. It’s kind of a cheat but sure is less frustrating with it.

Yes. Although it's just as much an RPG as it is a military strategy type game.

I pretty often do campaigns where I start as Norse and then invade somewhere in the Mediterranean (usually Sicily or Spain) so in those cases it’s pretty easy. Get ready to defend against at least one Crusade though, which can be very difficult.

Do you prefer the map or the battles in Medieval II? If the map, go for it, now. If the battles, maybe not, there's no similar battle mechanic in CK3.
