Why do we care so much about Israel?

Religion. US is a Protestant country and there are lots and lots of evangelical Christians that love Israel.

There are certainly political and economic motives as well but those were only constructed because of religious ties and the protestant background.

If US was a catholic country you wouldn’t see the same kind of obsession and cultural Zionism being spread and normalized by the media. Look at how the UK has a similar obsession but other European countries simply don’t care about giving so much focus to that country.

We need allies in the Middle East, for one thing.

Why?  While the Old World needs Middle East oil, we don't. There isn't a single natural resource of the area we need. While the world as a whole benefits from a stable Middle East, from the standpoint of naked realpolitik, the United States doesn't and it might even be to our benefit if it were less stable.  For that matter, being unilaterally on the side of Israel isn't necessarily a way of promoting stability in the region.

The main benefit we get from Israel these days is as a way to test our weapon systems and tactics in actual combat every so often.

Just look at the role that Israel has played in the American imagination of its identity from John Winthrop to Abraham Lincoln to Martin Luther King.  It would be surprising if we didn't care about Israel.

Unless you believe in evangelicalism, "supporting Israel until Judgment Day happens" overlaps pretty strongly with just "supporting Israel", doesn't it?

The latter is true only of emigrants. Israeli Jews have to stay Jewish for, again, Judgment Day. (Also, arguing that a religion seeing itself as universal shouldn't proselytize to a particular ethnic group is very weird, and, frankly, racist. Although I guess evangelicalism already does this and you didn't come up with the example on your own; you just believe in its opposite for some reason. Hm.)

Most of the population doesn't care about Israel, which is why conservative PACs have to cloak their identities in order to unseat someone like Ilhan Omar. They can't honestly tell the voting public what they're about, because then they wouldn't attract much support.
