An offshoot of my "Mongolian BBQ" thread. My favorite is Eastern North Carolina style but I will always prefer pulled or shredded regardless of the sauce used.

Ever since I returned to the states several years ago, I have made it a point to sample every BBQ flavor available in the supermarket.   And I have to say, KC really floats my boat. 

Not too sweet.  Not too rank.  Just right.

I dunno.  Never really taken the time to sort it out.  BBQ is one kind of food that New Orleans puts little effort into.  Pascale Manale's does a very good BBQ shrimp that is delicious.  There is a Blues and BBQ festival each Nov that has a wide range of BBQ though it's often through some ethnic prism like Vietnamese or Cajun.

When i travel through the Delta and Memphis , i'll eat BBQ and the pulled pork is the best, but I've had BBQ in other areas, mainly Georgia and it seems fine too.

Never really try to BBQ at home, but I do use a store bought BBQ sauce (Stubbs) on things one normally might use ketchup.

Its all so good. I've only come across 2 restaurants in Illinois that make a solid effort at BBQ. I love all the flavors. Beef. Pork. Texas, KC, Memphis, Carolina mustard. It is all fantastic. I hope to get myself to Memphis or KC one day just so I can try some A+ BBQ.

Easy Carolina vote for the mustard sauces. A good Carolina mustard can improve anything, just like a thick Texas molasses can ruin anything.

For Carolina BBQ, you have to go with the vinegar-based sauce (sorry, my family is from Eastern NC).

Honestly, I have a hard time picking just one type of BBQ because it's all so good.  Might actually go Texas because I really do enjoy brisket.

Pork > Beef, so Texas is out.  Brisket is gross; BBQ should be pulled, not sliced.

KC-style BBQ is derivative of Memphis-style BBQ, since BBQ was first introduced in Kansas City by Memphian Henry Perry.  While there's obviously been some divergence since its introduction, dry rubbing and tomato-based sauces are original to Memphis (and they still do it best.)  Sorry, dead0!  Sad

Really hard to say since its such a diverse cooking style. Texas is probably the best, but you gotta be in a specific mood for beef barbecue. East Carolina style is definitely the best for pork. Caribbean barbecue is also really underrated and is one the best things about living in Florida.
