Let's say that George Wallace becomes the nominee in 1972, and how would he do in the south and would there have been a African-American third party candidate or will African Americans vote Wallace or Nixon?

Hypothetical polls showed Nixon just barely ahead of Wallace among southern blacks.

As with 1976, if George Wallace became the Democratic nominee for President, the liberal wing of the Democratic Party would have a candidate ready to run as a third party candidate.  Indeed, some NORTHERN states would likely name faithless electors, or electors plainly pledged to another liberal Democrat.
