What if North and South America didn't exist, and it was just one, huge, open ocean from Western Europe to Eastern Asia?

With no landbridge to the Americas, Siberia and East Asia would be much more populous, since the people who became the ancestors of the Native Americans would have stayed there.

Europe would never have colonized the Americas, that discovery would never have transformed the power balance within Europe.

How would history have unfolded differently?

Europe never gains the advantages it did from the New World. So, I imagine that China or Japan comes to dominate the world.

The KT event asteroid approaches its impact 65 million years ago. However, instead of hitting the shallow, coastal waters as in real life, the asteroid smashes into deep ocean. The rock crashes through the sea, boiling it instantly around the impact zone, & smashes into the Earth. However, the miles of sea have absorbed enough energy to reduce the global effects of the impact. Giant waves radiate out for thousands of miles, slowly losing energy, & by the time they reach coastlines, they're much weaker. The global ecosystem is hit badly, animals & plants suffer from mass die-offs across the world; however, as the smoke lifts, the dinosaurs have survived. Mammals never take over the world, meaning no humans, as dinosaurs evolve further into new species. In what would be 2019 AD, dinosaurs very different to those we know inhabit the world. The world ecosystem has limped through the disaster behind it.

Japan was very isolationist at this time. I would say more wars with the Ottomans would ensue and Russia would have turned its interests southward faster, likely colonizing lands in Africa and the Atlantic. (The "Pacific" wasn't named by Europeans until the Americas were discovered, after all.) English ambitions would have been more contained and likely they wouldn't have evolved into the British Empire, although perhaps the EIC would still get them into colonialism. However, colonialism would have evolved with a very different focus, more religious and less national, due to the fact that the colonies would be seized from Muslims--likely via crusades.
