Who are some of the top policy wonks whose work encompasses most or all “politically related” fields? Wonks who know about history, law, economics, international politics, military, policy on all major areas in today’s political climate, etc. I’m trying to find some to read their works.

For economics, Mark Thoma's blog that links to the new writings of other economists has to be the gold standard.

Matthew Yglesias, Ezra Klein, Meghan McCardle, Noah Smith, Avik Roy. In other words, avoid reading anyone who describes themselves this way.

Wonks are semi-numerate dilletantes whose writing happens to have a national platform. Look instead for people who have distinguished themselves as experts in at least one field or in terms of a particular set of research methods.

These don't need to be academics. For instance, Nate Silver is a great counterexample. He rose to national prominence by blogging about probability models based on polls (also, baseball). FiveThirtyEight continues to be great within this domain, even though their coverage that strays from this, including almost all of their political analysis, is poor.
