This county voted for JFK by ~14% when he was winning Texas by 2% and winning nationally by ~.5%, but in 1964 it swung extremely hard towards Goldwater, with him winning by about 1 point even as LBJ won nationally by 22% and won Texas by 27%... So, why?

Those counties with barely 1,000 people, such as Glasscock, can be very swingy.  It's not as if Glasscock contained much of the Texas electorate, so it's not that surprising that such a result occurred.

Also, maybe enough of the voters in Glasscock were the Deep South-style racist Democrats that voted against LBJ just because of the Civil Rights Act?  I'm not sure.

Probably considering George Wallace won there in 1968.

Wallace only won it by 1%  and with 38.5% so I'm not sure that means it is/was full of racist Dixiecrats.

Likely a similar voter group as in the southern states (like GA) that voted for JFK in 1960, but flipped to Goldwater four years later.

That area in Southern Virginia that swung democrat under JFK in 1960 compared to 1956 only to swung heavily to goldwater was weird...
