One of the things that surprises me both in real life and on the Internet is how ignorant many people are of basic theology and I feel that everybody-both religious and non-religious-would be much better off if basic theologies of the major religions were taught in schools as part of History/Social Studies

A basic knowledge of Christian theology/concepts is essential to a good liberal arts education. At minimum much of Western canon is peppered in references to the Bible and Christian stories. I remember an English class I took in freshman year and literally no one got the "primal eldest curse" reference in Hamlet. You're reading the classics blind in my opinion of you don't have working background with the KJV Bible.

The question of course is how to implement theology into a secular curriculum without turning it into an anthropology course.

I am an atheist and I agree with this. Theology is a very rich and interesting tradition. There's much to talk about in terms of biblical interpretation and it offers a great deal of insight into various historical cultures.
