Butterflies, mumble mumble... The reasoning would've been that in the way that RFK's death came at the height of his political triumph, it was most tragic/fitting/ironic/operatic (with the storyline of 1968) that he die, and so a similar fate would befall the victorious McGovern in this timeline.

Wouldn't it be McCarthy instead? Because then we can have McGovern jump in as the true anti-war candidate and pick up McCarthy's supporters (saying McCarthy won California) like he did with RFK IRL - it'd also explain the low levels of McCarthy support here compared to in the primaries.
