Might I suggest the armadillo of the Oklahoma, Texas, New Mexico area.

Not only is it an formidable looking animal (and a bug hunter), the impenetrable shell it has mimcs the mindset of certain posters on this forum. (not naming names)

I actually like the jackalope as well.

It would be cool to have a different animal for each region (i.e. beaver for the west, coyote for the midwest, and taxi cab driver for the northeast, etc.)
