American isn't real cheese.

Cheddar. Especially the sharp kind.

I also like:

Blue Cheese (all kinds, including Gorgonzola, Danish Blue, and Stilton)
Aged Gouda
Havarti
Gloucester
Dubliner
Butterkäse
Mozzarella (fresh preferred, but I don't mind part-skim)
Pecorino Romano
etc.

And to those of you who think that American crap is cheese, I'm disappointed in you.
