If I'm paying and I want an expensive meal, I'll order it, regardless of what anyone else gets.  If I'm out with my parents, they're usually OK with me ordering one of the pricier steaks (especially if we go to a steakhouse), so I'll typically get one (maybe with asking first if it's at all borderline).  But, if it's someone other than close family and I'm not paying, I'll watch to see what others get and try to fall in a similar range.
