What would be the outcome if the following were to occur:

1. Trump and Clinton don't reach 270 due to McMullin's win in Utah

2. The vote goes to the House with 17 for Clinton, 17 for Trump, and 16 for McMullin

3. Ryan chooses McMullin

Is this possible and if so, what would happen afterwards?

President McMullin, probably Vice President Pence, with Democrats voting for McMullin in the house to prevent Trump or Pence from becoming President. If the dems underperform their polls that badly, theres no way the GOP loses the Senate

Yeah, my guess is that the House would deliberately punt to allow Pence to become President. McMullin is an unknown quantity and his selection would seem undemocratic. Especially if Trump/Pence won the popular vote, Pence would have a legit claim.

Pence would only be Acting President (he would still legally be Vice President). This means that Pence cannot nominate a Vice President and the Speaker of the House is next in the line of succession.

The House is constitutionally required to elect a President until one of the candidates wins the support of 26 state delegations.
