You think those -an, -en, -on names sound neo-Victorian? I have to say I can't really see it. 'Ethan', maybe, but I don't think that's really comparable to the others. 'Ethan' is a perfectly cromulent Hebrew name.
i was thinking more stuff like olivia, noah, elliott, oliver, xavier, etc. the similar sounding names ending in consonants is sort of an overlapping trend. in some cases it wouldn't be that bad if it wasn't for the overuse of certain names admittedly. i guess i have sort of a bias towards names from the mid 20th century

Of those, only Oliver could be considered remotely "Victorian" (see links above).  Xavier was entirely unheard of before about 1945.  No, if you want "Victorian", you want names like Harry, Walter, Arthur, Roy, Oscar, and Herman for boys, or Florence, Ethel, Clara, Alice, Cora, or Ada for girls.  This "-n" business for boy names (which is, indeed, a Trend (tm)) is quite modern.

My first child I'd like to name after my great-grandfather, who was Gregory Israel, so I suppose that would be it. It would have to be something evocative of that if my first child was a daughter (Grace, perhaps), but I don't have a particularly strong opinion. Name preferences after that depend on which, God forbid, of my family members or close friends have died, since family tradition (and Ashkenazi tradition generally) is to name children after recently dead relatives.

Come GUYS, you're acting like you'll have any say in what your offspring are called.  If you're lucky you might get to veto a name or two.

I thought Jewish naming custom simply stated that you are not supposed to name your child after someone who is still alive.

Yes, if you do that then the person you have named your child after will soon die (according to superstition). That's a more iron rule (though only among Ashkenazi Jews; Sephardic Jews commonly name children after people who are still alive) than the custom of naming children after recently dead relatives, which is very common but merely optional. Naming your child after people who are alive is Not Done in Ashkenazi culture.

(This is verboten in Arab culture as well, but the logic behind it may differ.) I've also heard that if you want to make reference to a relative or a loved one in your child's name, you're supposed to give them a name that starts with the same letter, rather than giving them the exact same name.

That is an alternative to giving the exact same name, if the name has fallen out of style, if it's associated with some celebrity or politician who the parents dislike, or if there is already someone close to the family with that name. For instance, if my first child were to be a girl and I wanted to name her after my great-grandfather, I could name her Grace (which starts with the same first two letters), but I probably wouldn't name her Gail or Gabriella since I already have relatives with those names. (Names that begin with a G, you might notice, are preposterously common in my extended family). If he was a boy and I decided I didn't like the name Gregory but still wanted to honor my great-grandfather, I could go with Grayson or something.

We picked two traditional names for our children. My daughter's name was in the top twenty 100, 50, and 20 years ago, and in the top 10 for most of that time. My son's name was top ten 100 years ago and still top twenty 50 years ago but has fallen to around fiftieth over the last couple of decades.

Leo, for a potential first son, is non-negotiable on my part. You either accept that or you don't get to adopt children with me. Wink For daughers and/or following sons I'm rather open to suggestions though.

I'm glad my dad was overridden when it came to the naming of his sons. Otherwise my first name would have been Deckmar... could you imagine anything more horrid.

He was able to be a bit more influencial on my sisters' names though.

My lists may not be likeliest since thoughts and ideas change over time, but they're names that I like and would be at the top of my list for any children (particularly now). Some have been at the top of my mind for a long time, so I doubt my mind will change on some. Overall, I'm more adamant with picking boys names than girls. In no particular order for either:

Boys:
Andrew
Alexandros
Aristotle
Frederick
Joseph

Girls:
Katherine
Victoria
Juliet
Jacqueline
Diana

Even if it's a good name, I try to avoid anything on the top 10 list. I tend to like "A" names for boys. And, even though I'm not Greek, I really like Greek names for boys (hence my high listing of Alexandros and Aristotle). The leftovers from first names would ideally be used as middle names.
