For quick evolution in action you can look at snail kites in southern Florida due to the arrival of the apple snail.

Cool. I didn't know about that.

They almost disappeared but are now back in high numbers with larger beaks. The smaller beaked ones couldn’t make it but the few with larger beaks before got the competitive advantage and multiplied and passed on their genes.

Bats immune systems are crazy which is why they can survive long enough to mutate some pretty bad viruses.
