In both the presidential race and senate races, the polls in Georgia were very accurate. The most accurate of any competitive state. Why is that? What made the Peach State immune to the issues pollsters faced in other states?

My guess is that Georgia is still seen as a lean/tilt red state, so the Silent Trump vote wasn't a factor. They were comfortable with answering pollsters.
