If you mean actual sausages, sausage. As for sausage meat in patty form, it's still better than eating pig but a particularly unappetising method of eating beef. At least make it into a proper rissole.

Most sausages are pork?

Anyway, I'll take the Moderate Hero option and declare them both delicious.

Sausages are beef unless they're pork sausages or lamb sausages or chicken susages, tyvm. But the standard is certainly beef.
