Just threw them in chronological order, because to decipher an order for these would be too daunting.  All of them are a solid 10/10 in my book.

Castlevania III: Dracula Curse, NES, 1990

Super Castlevania IV, SNES, 1991

Megaman X-X2-X3, SNES, 1993-95 (I count these as one because they're practically the same game... hell, they ARE the same game

Super Metroid, SNES, 1994

Resident Evil, PSX, 1996

Goldeneye 007, N64, 1996

Castlevania: Symphony of the Night, PSX, 1997

Resident Evil 2, PSX, 1998

The Legend Of Zelda: Ocarina Of Time, N64, 1998

Perfect Dark, N64, 1999

Skies Of Arcadia, DC, 1999

The Legend Of Zelda: Majora's Mask, N64, 2000

Final Fantasy X, PS2, 2000

Metroid Prime, GC, 2001

Resident Evil 4, GC, 2004

You're basically a human being who was born in like 1987. Congratulations.

Nice guess.  And i will accept your sarcastic bit of congrats with gratitude.

Your list is missing star fox and smash bros, but otherwise a great list for our generation

Thanks Baconator!  I own Star Fox and SSB:Melee, and they're both awesome just not quite in my upper pantheon of gaming greatness.

Honestly, if you like Mario games, you should probably just play 2010's Super Mario Galaxy 2.  It's basically the best 3D platformer ever made, and it knocks the socks off of the other Mario games.

I really need to get on playing Galaxy and Galaxy 2.  I'm not the biggest Mario fan in the world, but I loved 64 and Sunshine, so I'm not sure what I'm waiting for.

I'd have to disagree. The level format felt far too linear compared to the original SMG, Super Mario 64, and especially Super Mario Sunshine (a terribly underrated game which barely gave you a set path to follow). Kind of a weak soundtrack compared to the first SMG, too. The best 2D platformer is still Super Mario World thanks to all the secret exits and the fact that Mario has a goddamn cape. Bonus points for all the awesome ROM hacks done of Super Mario World, too.

Indeed.  Super Mario World >>>> any other Mario.

No Mario games at all? Terrible list. I agree that RES4 and Goldeneye were awesome.

Mario just never tickled my fancy like Metroid and Castlevania did in my early gaming days.  They're great games, but they just can't break into my Top 20 or so.  Super Mario World comes very close.
