I believe they were actually called Salisbury Steaks... and the name did stick to a similar dish which is more like the traditional hamburger... of a ground beef patty seasoned and covered in gravy and often mushrooms and served with mashed potatoes and a veggie of some sort.
Interestingly, because of the animosity towards German immigrants during WWI, German-Americans had embraced assimilation and by WWII there wasn't much anti-German sentiment... by that point they were simply "Americans"... and they remain probably the most assimilated of any traditional white immigrant group outside of the English.
