So you're OK with euthanasia, he's allowed to kill himself since consent is the main thing that matters.
Why does it matter so much what someone chooses and consents to do with their body after they do euthanasia? After all, why does it matter to you what people are doing in the privacy of their own homes?

There are plenty of policy-oriented reasons to make cannibalism illegal aside from appealing to some kind of cosmic morality. Consent is hard to verify after the fact; also, pretty much every type of blood-borne disease can spread when consuming human flesh.
