What's the best way to prepare a pork tenderloin Mr. Butcher?

What's the difference in taste between the grass fed and the corn fed beef?

Good questions - let me get on those right now and I'll get back to you.

Pork Tenderloin can be prepared either by grill or pan-roasting.

To start off you can either marinate, brine, glaze, or dry rub the meat if you prefer.

Marinades can be garlic and olive oil, teriyaki, or other ingredients.  Marinate it in a sealable bag overnight.

Brining - enhances the juiciness of the meat.  Soak the meat in a saltwater mixture and refrigerating.

Glaze - You can glaze with almost anything syrupy AFTER you've seared the meat and BEFORE you cook it.

Dry Rub - Use a variety of ground herbs and spices, parsley, basil, or cilantro and apply it to the meat anytime before cooking even up to hours before or right before cooking.

Grilling - Always cook over indirect heat and it usually takes 20-30 minutes over medium-high heat.  Flip every 4 minutes until the internal temperature reaches 135-140 degrees Fahrenheit.  Let the tenderloin cool before serving.

Pan-Roasting - Preheat oven to 425 and coat an ovenproof skillet with oil.  Sear the meat over medium-high heat until brown on all sides.  Roast meat for 15-20 minutes until internal temp reaches 145 F.  Let cool before serving.

Many thanks to my friend Betty Crocker for this guide.

In short - they generally taste the same unless the pasture the grass-fed cows live on is poorly managed.

Grass fed is the premium product though. You want to make it sound better to make the sale. More natural, flavorful, etc.

Ahh, good point.

One wonders how many days we'll here this before it's RIP time.  Define "snowed in" please.

We had 2-3" of snow plus a layer of ice (freezing drizzle).  There were reports of 15 wrecks every hour across the OKC Metro both Friday and Saturday.  The main roads never got extremely bad, but the side roads were a complete mess.  The City basically shut down completely Friday and especially over the weekend.  The roads improved greatly yesterday afternoon and will be even better today, so I'm going to head back home to Tulsa shortly after Noon today.

Good job! Now go get a pork loin and try it.

I'm going to follow J-Mann's advice here and leave my money in my wallet.  I don't want to throw money away by ruining a cut of meat.

I must make a confession...  I stayed up until 0100 this morning watching the Atlanta NASCAR race that I had recorded.  Way past my bedtime.  The DVR cut off with 17 laps to go just after the massive wreck that forced a red flag with 20 laps to go.  I am already planning on watching the Las Vegas race next Sunday at 1430 and may put that on record when I get home this evening.  I may be turning into a NASCAR fan.  Favorite driver?  Dale, Jr.

Bushie, how many one way miles to work is this place?   Since  your state almost closes down at the sight of a snowflake.

15

You better pray there's no late season snow or it's RIP

This being Oklahoma, we should safely get into Spring in the next couple of weeks.  It is extremely rare for us to get snow in April, and if it does it never sticks and it's always above freezing.  More likely, we get tornadoes in late March and April.  When I start work we will be in severe weather season.  Remember, Oklahoma is the heart of tornado alley.

RIP job

Amen.  Everyone is trying to make ODF into a sommelier so he can keep his job......I'm horribly disappointed in my friends here.  He's going to lose it:

1) Because of physical limitations, or

2) Absenteeism.

If he knows how to cook a spencer steak so it doesn't taste like shoe leather, or that you need to cook dry aged steaks 1/3 less time than wet aged, who fucking cares.

So, everyone who is confident I can keep this job are idiots?

You need not be so pessimistic and not speak in absolutes there.  Of course I can keep this job.  Anybody who is not critical just to be critical can see that.

I thought you were happy I got this job?  Now, you're saying I'm a gonner?  Stay classy.

I made it back home to Tulsa about an hour ago.  It looks like my background check came back clean.  I got a packet in the mail with my credit and background check report and it was all clean.  So now, I wait on an official start date and hours.

What's for dinner tonight?  And when's your next weigh-in?

Not sure if I will have dinner.  I am feeling nauseous right now.

I will weigh in again in the morning.

Wait... credit check?

Actually.. wait... no credit check, just a background check according to the documents I received which verifies which was told me at the interview.

Some employers, especially those with the handling of money, do require credit checks, though, to make sure you are not delinquent on your own bills and are trustworthy to handle a corporations money.

The funny things are:

1-Bushie's credit report is no doubt garbage and
2-Unlike many people with bad credit, most of it is primarily his fault.

Bushie isn't like the people with sob stories about being foreclosed in 2008 after being laid off during the worst of the recession or people who had to declare bankruptcy after massive medical bills, his credit black marks are all due to him not being able to hold a job for more than a few months and awful decision making on top of that. Take the short sale of his house, which could've been completely avoided had he never bought the house that he never needed in the first place. So if they still hire after the credit check, I wonder what they are looking for. Granted I know it's common that the only employers who tend to care a lot about credit score are financial industry ones but then you wonder why this one is checking in the first place.

Actually, I just checked my credit score a couple of weeks ago and I'm sitting pretty good.  It's by no means glamorous, but it is not garbage, either.  The worst problem I have is a nearly maxed out credit card.  The short sale on the house doesn't even show up, so my realtor was right, it must have dropped off my credit after a year or so, which would have been last August.  I don't care to release the actual score here, naturally, but it's not that bad.  It could use some improvement, but I would be able to sign for a major purchase like furniture or a car without needing a cosigner.

Bushie, a short-sale will still show up on the Credit Report.  What you looked at is a Consumer report which takes less into consideration than a full report.

A full credit report has three bureau's and goes back much further in time, the short-sale absolutely will show up when you look for a car, try to buy a home, etc, as banks get a much fuller picture when they pull credit than you do through a consumer report.

We had this discussion back in 2013, we're not going to go over it again.

Bushie, do you have a problem with binge eating? You're not alone if you do.

Binge as in I eat and eat and eat seemingly without stop?  Not really.  I eat a lot, but I really don't binge on anything except maybe cokes.  My problem is the choices I make and not liking the idea of cooking for one.  It's no fun cooking for just one person.

Just cut down on the amounts given in any recipe you're using. Problem solved.

That's not the problem.  It's the loneliness factor.

And it isn't lonely when you get your food in a drive thru?

It's lonely there, too, but it turns into "comfort food" at the drive thru.  I find comfort in hamburgers and pizza more so than in vegetables and fruits.  I know that's not a good thing, but it's what I am dealing with.

bushie is your grocery job full or part time?

if it is part time, your hours will be slashed as soon as you start calling out with grade 6 headaches.

It is full time.  I would not accept a part-time job.

But you could cook your own comfort food. You might find it surprisingly enjoyable. Control of ingredients and portion sizes would mean that it would be better for on two counts (i.e. what you're eating and what you're spending).

I agree with that, but getting in that habit is not as easy as it looks.

You binge cokes? You drink several at one setting?

One after the other sometimes.

I would binge drink cokes too if it were my only source of hydration.

I have been drinking more water.  I'm not up to where I need to be, but I'm at about 2-4 glasses a day which is better than 0 glasses a day.

did papa give you an ultimatum about a job?

No, this grocery job was entirely of my own doing.  Dad was on board instantly after I told him (which I didn't tell them until AFTER the interview and hire).  Mom took some more persuading, basically concerned about the physical labor, but she sees the need in putting an end to the job search because I wasn't getting any legitimate bites from anybody else.  She sees the need, but not necessarily agrees with THIS particular job.  I think Dad and I have ironed her fears out, though.  Now, it's up to me to produce (no pun intended)!

So, Bushie, as preparation, double your walking time to 40 minutes/day! You can do it in two 20 minute spurts if you like, but it needs to be done.

After tomorrow's bout of wintry weather is over (a tenth of an inch of ice and 2-4" of sleet and snow), I do plan to get out and start walking again.  I'm going to work my way up, but a little more quickly than what I did in February.  My stomach is still a little upset, so I won't walk tonight, but I will try to walk at least by the weekend.  I think Spring time may start taking hold in NE Oklahoma this weekend, so I'm hoping to get in more walking without having to worry about wintry weather or bitter cold.  Remember, when I get into the grocery store behind the meat counter, it will be mostly climate controlled except for the times that I walk into the meat freezer, which likely won't be for an extended period each time.
