When I was a vendor, during my summers in college, I actually enjoyed the 5AM-1PM shift. You get in before anybody is really around and you're done way before rush hour hits. However, those days rarely happened, it was more of a 7-4 shift.
For the Army (in a garrison environment), I was content on 6:30 for PT, work at 9:00, lunch at either 11:30 or 12:00 and go home for the day at 16:30. Although those days didn't happen much either.
