I think Ernst refusing to do local interviews had less to do with declaring victory and more to do with her advisers not wanting her to get in these long newspaper board policy discussions. Honestly, if she gets drawn out more on some of her 'gun protecting herself from the government' views, it could seriously damage her chances to win.
